One of the first accessories you’ll want to acquire is a way to store your fine cutlery if it didn’t come with a storage system. There are numerous wooden blocks, knife sleeves and drawer compartments. However you decide to store your knives make sure they aren’t banged into by other utensils or hard objects that could dull or damage the blade.

A good cutting or chopping board is essential if you do a lot of food preparation. While there are many made from glass please don’t do any cutting on them since it will damage your blades. Instead use wood, bamboo or plastic. You may find it more efficient, and safer, to have a cutting board for different tasks such as cutting meats, slicing vegetables and for presentation of prepared foods.

After using your knives they will become dull over a period of time and will need to be steeled or sharpened. There is a difference between “steeling” a blade and sharpening it. Steeling simply aligns the edges while sharpening removes material to give a new edge. There are several unique new tools available that do a good job of sharpening in the home. If you own ceramic knives never try to steel or sharpen them. Send them in to the manufacturer instead so they won’t be damaged.

If you are concerned about cutting fingers and hands while working in the kitchen invest in a pair of cut resistant gloves. There are several styles available made from aramid, kevlar and even stainless steel. Pretty cheap insurance if you consider the cost of going to the emergency room for stitches after an accident.
